If you’ve been invited to a company picnic, pot-luck, or backyard barbecue this summer, but don’t know what to bring, try whipping up this easy and delicious summer salad from our Receptionist, Fay. It’s easy to make, easy to customize, and keeps well for several days!
1 can each of the following beans, drained and rinsed well: Red kidney beans, Lima beans, Chickpeas, Black beans, Black Eyed Peas, and Great North Beans*
1 can Whole Kernel Sweet Corn, drained and rinsed well
1 chopped Red Onion*
1 bottle of Regular or Lite Balsamic Vinaigrette*
Mix all together and refrigerate for at least one hour.
*Fay’s notes: You can use all or only some of the beans listed. The beans and must be canned and not dried. The size of the onion is up to you, depending on your taste preferences. Italian dressing can be substituted for Balsamic Vinaigrette. The longer this salad sits, the more flavorful it will become. Stir before serving!
